60ml Mariposa
5ml Simple syrup
2 dashes of Angostura Bitters
Orange peel, to garnish
Add all the ingredients in a mixing glass with ice and stir well to chill and dilute. Strain into a rocks glass over fresh ice and garnish with a large twist of orange peel.

Top up a flute glass with Prosecco or any other sparkling wine

Top up a highball glass with bitter lemon
1 litre apple juice
6 allspice berries
2 green cardamom
1 star anise
1 bay leaf
2 cloves
1/2 tsp nutmeg
1/2 tsp cassia
Place all the spices in a bag and then put them in the apple juice. Heat slowly for 30 mins to just below boiling and then leave to steep for a few hours - taste to see when ready. Pour 25ml Papillon Gin in glass or cup, fill up with around 150ml of the spiced apple juice.
Garnish with a slice of orange.
